Alton Brown Has A Genius Trick For Making Ultra Fudgy Brownies

So when I came across one of his brownies recipes (called cocoa brownies 2.0) that had a clever trick for making them extra fudgy, I knew I needed to share it. 👀 Because let's be honest — frudgy brownies are THE BEST brownies.

"Proof positive that technique is just as important as ingredients," reads Brown's headnote.
His trick? Baking the brownies in a 300° F oven for 15 minutes, then removing the brownies from the oven and letting them sit on the counter for 15 minutes. After that 15-minute rest time, he pops them back in the oven to finish baking.

This resting time is the secret. 👌
The final baking time will take about 30 minutes, and Brown suggests using an instant read thermometer to check the brownies temperature so they are perfectly baked.
You want them to be 195° F. If you don't have a thermometer, you can get one on Amazon for $10.99.
And that's it! A simple resting time during the baking process makes all the difference and creates "an ooey-gooey brownie" you'll want to make over and over again. It doesn't really take any additional work, just a little patience.
