Why? Because, due to the shape of the bowl, the "oil and unpopped kernels pool at the bottom where the heat is the greatest, while popped kernels rise up the side away from the heat" says Brown. This prevents the already popped kernels from burning.
To start, Brown combines oil, popcorn kernels, and salt in a large metal bowl.
Brown places the bowl directly over a medium flame and uses tongs to shake the bowl around. "Forty-five seconds to a minute will go by and nothing is going to happen," explains Brown, "but it's important that you keep the vessel in motion." Just be careful and make sure you don't burn yourself.
After a few minutes of shaking, the popcorn will be perfected popped without any burnt bits. The bowl will be hot, so just make sure to let it cool down for a few minutes before eating directly out of it. 😋
