You’ll Need:

EGGPLANT 
  1. 1 kg/2 lb eggplant (aubergines) , 0.75cm/0.3" thick cuts 
  2. 1 tsp salt 
  3. 2 - 3 tbsp olive oil 
FILLING 
  1. 1 tbsp olive oil 
  2. 1 onion , diced (darker, white, yellow) 
  3. 3 garlic cloves , minced 
  4. 1.4 lb/700 g ground hamburger or sheep (mince) (Note 1) 
  5. 1/2 glass (125ml) red wine , dry (discretionary) 
  6. 14 oz/400g squashed tomatoes 
  7. 3 tbsp tomato glue 
  8. 1 glass (250 ml) hamburger juices/stock (Note 2) 
  9. 1 hamburger bouillon solid shape , disintegrated (or 1 tsp powder) 
  10. 2 cove leaves 
  11. 1.5 tsp sugar (any) 
  12. 2 tsp dried oregano 
  13. 1/2 tsp cinnamon (or 1 stick, utilize entirety) 
  14. 3/4 tsp salt 
BECHAMEL SAUCE 
  1. 4 tbsp spread 
  2. 5 tbsp plain flour 
  3. 2.5 containers (625 ml) milk (any fat %) 
  4. 1/4 tsp nutmeg, crisply ground (discretionary) 
  5. 1/2 glass (50g) parmesan cheddar, ground (or Kefalotiri Cheddar) (Note 3) 
  6. 1 egg 
  7. 1 egg yolk 
  8. 1.25 tsp Vegeta, vegetable or chicken stock powder (or salt) (Note 4) 
  9. 1/4 tsp pepper 
TOPPING 
  1. 1/3 glass panko breadcrumbs

How to Make:

  1. Spot eggplant marginally covering in a substantial colander. Sprinkle with some salt. Rehash with outstanding eggplant. 
  2. Leave to sweat for 30 minutes. Then, make Meat Sauce and Béchamel Sauce.
